Matumbo with Bananas in Coconut milk

This week, we will learn how to cook matumbo with bananas in coconut milk – a simple to make, yet delicious meal that will leave your taste buds rejoicing. If all you’ve ever taken matumbo with is ugali, then you should try it with bananas – you’ll love it.

The main ingredient is a kilogramme of matumbo. Wash it well under running water, and ensure you boil until tender – there’s nothing enjoyable about hard matumbo.

Ingredients:

  • 1 kg matumbo, boiled till tender and chopped into small pieces
  • 2 tomatoes, chopped
  • 15 Kiganda bananas, peeled and chopped into 2cm pieces.
  • Coconut – about two cups of coconut milk or more as desired
  • 2 onions chopped
  • Salt to taste

Procedure:

1. Fry the onions till golden.

2. Add matumbo and tomatoes to the fried onions.

3. When the tomatoes are cooked, add coconut milk and salt.

4. Add bananas. Cover and bring to a boil, then lower heat and simmer until bananas are cooked.

5. As they simmer, stir the bananas and matumbo to prevent from sticking to the bottom of the pot.

6. When the bananas cook, and the coconut milk thickens, remove from stove, and serve will hot.
